Essential mineral

Potassium

Potassium is an electrolyte: a mineral that carries an electrical charge in body fluids. Differences in potassium levels inside and outside cells help nerves signal and muscles contract.

What it does, and how

  • Help muscles respond to signals

Muscle cells also depend on differences in charged particles across their membranes. Potassium helps maintain the conditions needed for muscle contraction.

    Muscle contraction · Evidence

The potassium concentration gradient is required for muscle contraction.

Normal physiological role only; does not establish an effect of eating Kale.

  • Help nerves send electrical messages

The potassium difference across a nerve cell's membrane is part of the system used to transmit a signal. Potassium is one participant in this process, alongside other electrolytes.

    Nerve transmission · Evidence

The potassium concentration gradient is required for nerve transmission.

Normal physiological role only; does not establish an effect of eating Kale.

    • Read sourceIntroduction: intracellular cation and sodium-potassium ATPase concentration gradient paragraphs
  • Maintain a difference across the cell boundary

Cells keep much more potassium inside than outside. Together with other charged particles, this difference creates the electrical conditions needed for normal cell activity.

    Cellular electrochemical gradients · Evidence

Potassium contributes to membrane electrochemical gradients.

Normal physiological role only; does not establish an effect of eating Kale.

Where it works in the body

A nutrient can take part in more than one body system. Follow a connection to see how its work fits together with other nutrients.

The body map groups established nutrient roles to help you explore; it does not predict a health outcome from eating a food. Evidence and mapping notes.

Reference food in our crop catalog

Reference composition

Basis: raw edible food, per 100 g. % DV uses FDA Daily Values for adults and children 4+ where one exists; values above 100% are shown without capping. Reference amounts describe the USDA food, not a UCFarms harvest. “No DV” means there is no applicable Daily Value or conversion.
